Abstract

The article compares the fatty acids present in waste oils generated during fish frying with the fatty acids found
in fish oil and sunflower oil. The results show that the proportion of unsaturated fatty acids in the waste oil increased by
8.7% compared to the unsaturated fatty acids in fish oil. It is emphasized that the use of waste oils makes it possible to
develop an economically efficient and resource-saving technology for the fatliquoring of karakul pelts
